As the heat of summer has kicked off into high Mordor gear, my kombucha has gone to vinegar whilst I’ve been busy with life. I had experimented with making herbal kombucha and threw in some rosemary. I forgot about it and it grew a SCOBY with little rosemary bits all up in there. So I took the soaked rosemary and the SCOBY to make this dressing. This dressing is awesome and a great use for kombucha vinegar and SCOBYies with all the happy bacteria too.
Blend Rosemary infused Kombucha vinegar with 1/2 and avocado, 1/2 Veganaise, 1 tsp lemon juice, 1 tbsp. olive oil and 2 cloves of garlic with an immersion blender. Pour into a nice jar and pop into the fridge. I’d eat this quickly since there is live bacteria inside.
